Around the world, roughly two billion people eat insects as part of their regular diet, noshing on about 1,900 different bug species. Here, where we don’t have a strong tradition of eating beetles, caterpillars, bees, or crickets — some of the most popular dietary insects, according to the Food and Agriculture Organization of the United Nations — we eat bugs, too, but by accident. We ingest them via invisible fragments in our coffee, wheat, pasta, chocolate, and other foods and drinks.
